The two day seminars are taught by legends Jean-Marie Auboine, Susan Notter with Karen Portaleo, and Stéphane Tréand on August 26th & 27th.

On the 28th The National Showpiece Championship kicks off. This year's teams include Andy Chlebana & Nancy Kerry, Tracy DeWitt & David Smoake, Heather Hurlbert & Natasha Capper, Yoni Morales & Alfredo Rueda and Jim Mullaney & David Ramirez.

Michael Joy teaching a mold making classWe will be teaching our Last Mold Making Class of 2011 on August 14-16. The class will be small allowing for a personalized experience with plenty of time to work directly with master mold maker Michael Joy. While we can't compress Michael's 20 years experience into 3 days, you will leave with a solid understanding, invaluable information and all of the molds you made in class.

Chicago Restaurant Pastry Competition
ChicagoRestaurant Pastry CompetitionThe first Chicago Restaurant Pastry Competition will take place October 15-17, 2011 at the Chicago School of Mold Making. Sponsored by IN2Foods, ChocoVic and us. Executive pastry Chef Jimmy MacMillan has organized the event to promote Chicago based chefs and their work. Based in Italy, Pasticceria Internazionale ran this article in their Worldwide edition.

Beatrice is off to the 2011 Amoretti National Pastry Team Championship later today to cover the event and will get News posted as soon as possible. Enjoy your summer and no matter how much you eat, don't forget to leave room for dessert!
