It has been a great summer! Mold making classes continue to go well and we hope you will be able to join us in the future. Mold Making Class
Don't miss out, we will be teaching our Last Mold Making Class of the year on August 14-16 2011. The class are small allowing for a personalized experience with plenty of time to work directly with mold maker Michael Joy. While we can't compress Michael's 20 years experience into 3 days, you will leave with a solid understanding, invaluable information and all of the molds you made in class.

The Amoretti 2011 National Pastry Team Championship was a great way to kick-off the Summer. Team Padua competed with Team Gallego who was awarded Best Sugar, Team Gonzalez was awarded Best Chocolate Showpiece, and First Place went to Team Wressell with Donald Wressell, Scott Green and Joshua Johnson. The two-day seminars are taught by renowned pastry chefs Jean-Marie Auboine, Susan Notter with Karen Portaleo, and Stéphane Tréand, MOF on August 26th & 27th.
On the 28th, The National Showpiece Championship kicks off. This year's teams include Andy Chlebana & Nancy Carey, Tracy DeWitt & David Smoake, Heather Hurlbert & Natasha Capper, Yoni Morales & Alfredo Rueda and Jim Mullaney & David Ramirez. The teams have six hours to build one showpiece either sugar or chocolate. With no theme and few limits, the results will be like nothing we've seen before!
